Sweetly Romantic Chocolate & Coffee Torte Recipe
Christopher Greenwald, Amorosa Bella’s premier “Sensual Chef!” shares a “sweet” recipe to delight your Valentine!
This is a classic. The added coffee is just the right accent to boost the chocolate flavor. This recipe is the epitome of simple but delicious cooking and has never failed to impress. Serve with it with just a dollop of barely sweetened whip cream, a sprinkle of cocoa powder or, serve it naked and watch as sparks fly!
Luscious Chocolate and Coffee Torte-
8 oz bittersweet chocolate (chopped)
4 oz unsweetened chocolate (chopped)
16 T. unsalted butter (plus more for greasing pan)
½ cup hot brewed coffee (strong)
1 t. kosher salt
1 t. vanilla extract
5 large eggs (room temp)
½ cup sugar
1 ½ T. all purpose flour
Heat oven to 350 degrees. Cut a piece of parchment paper to fit the bottom of a 9-inch round cake pan. Line the bottom of the pan with the paper and then butter the paper. Melt the chocolate with the butter in a double boiler over simmering water then add coffee, vanilla and salt. Beat the sugar and eggs together until it is light in color and holds ribbons (about 5 minutes). Fold the eggs into the chocolate mixture and add the flour.
Pour the batter into the prepared pan then put that pan in a slightly larger pan filled with warm water to about 1 inch deep. Bake until the cake is mostly set with just a slight jiggle in the center. Remove the cake from the oven and carefully lift it out of the water bath. Let the cake cool to room temperature and before attempting to remove onto a platter. Serve at room temperature.
