Heart-Healthy & Mind-Stimulating Culinary Pleasure
Straight to your table from Christopher Greenwald, Amorosa Bella’s premier “Sensual Chef!” is a recipe is both sensuous and sustainable.
It not only tantalizes ones sight, smell and taste; it nourishes the body with healthful ingredients like olive oil, lemon zest and honey.
Zaatar is a Middle Eastern condiment made from dried sumac, dried thyme, sesame seeds and sea salt. It has an earthy and slightly lemony flavor; here it pairs well with the richness of the sturgeon and the sweetness of the apples.
Sturgeon is high in Omega-3 fatty acids, which are widely known for their heart health benefits, and the zaatar itself is said by many to increase brainpower.
This dish is also wonderfully wine friendly and a match made in heaven for the 2008 Amorosa Bella Russian River Chardonnay.
Grilled Sturgeon and Apple Salad with Zaatar
12 oz. Sturgeon fillet (cut into 6 pieces)2 T. olive oil
Salt and pepper to taste
2 apples
½ t. lemon zest
½ t. honey
½ t. fresh thyme
1 Head Limestone Lettuce
1 T. Zaatar
Salt and pepper the sturgeon fillets. Heat a grill or flattop to high heat. Meanwhile, slice apples into 2-inch matchsticks and toss with 1 T. olive oil, zest, honey, and thyme. Clean and dry lettuce and pull into perfect lettuce cups. Add the remaining 1 T. olive oil to the fish pieces or directly to flat top and grill on one side for 2-3 minutes, turn over and grill for 2 more minutes, then remove from heat and plate. Find the 6 best lettuce cups and place 1 sturgeon fillet on each, top with apple mixture and sprinkle with Zaatar. Serve immediately.
Serves 6 as a light entrée
